We began with a fluffy base beer and aged it in French wine barrels for 9 months. Over time, the barrels and a hand-picked mix of European yeasts worked their magic to give something deliciously dry with notes of oak, red apple, fairy floss, crusty bread and a light farmhouse funk. Afterwards, we gave this beer a serious sour kick when we added almost 300 grams of sour cherry to every litre of beer.
